Scrumptious Blueberry Mini Muffins

“Scrumptious Blueberry Muffins”. …That’s what they were called, when I came across the recipe on the back of the Bob’s 1-to-1 Gluten Free flour bag. Honestly I thought, well, then, these must be good with a word like “scrumptious” involved. I feel like that’s a word that doesn’t get pulled out to often, unless it is damn good! So I figured they were worth a try. Problem is, I wanted to eat them too, but they called for milk and eggs (both of which I don’t eat). They also had a a little more sugar than I like in our muffins. I modify recipes a lot, however, I questioned, will I take the scrumptious-ness out of these? I felt so much pressure from that word! …But I went for it. Took a chance, made some changes, made them “mini” & I think it’s safe to say they are still scrumptious!

ingredients.

2 cups Bob’s Red Mill Gluten Free 1-to-1 Baking Flour

2 tsp Baking Powder

1/2 tsp Salt

1/2 cup Coconut oil, unrefined & melted

1/2 cup, plus 1 tsp Cane Sugar, divided

1/2 cup Banana, ripe & mashed

2 “eggs worth” of Bob’s Gluten-free Vegan egg Replacer (or 2 large eggs, if not egg free)

1/2 cup Unsweetened Vanilla Coconut milk

1 1/2 cups Fresh blueberries

The How-To

Preheat oven to 425 degrees. Grease mini muffin pan with unrefined coconut oil. Mix egg substitute per instructions on bag, if using. Whisk together flour, baking powder and salt. In a large bowl, mix together coconut oil, sugar & mashed banana. Add egg substitute (or eggs) beating well after. Add half the flour mixture and beat until just blended. Beat in coconut milk, then add remaining flour mixture and beat until blended. Gently fold the blueberries into the batter.

Spoon batter into prepared mini muffin pan. Sprinkle with remaining 1 tsp of cane sugar. Place pan in oven and immediately reduce heat to 375 degrees and bake for 12-17 minutes or until golden brown. I watched them, a lot, to get them just right & each pan was a different amount of time. Cool in pan fro 5 minutes. Move to wire rack to cool completely.

Delicious with butter, or vegan butter. Enjoy!
